There are four main steps when making this banana cake.

Bristol’s Great Aunt Bussey’s Banana Cake

Ingredients: 1 teaspoon vanilla

2 eggs (separate whites from yolks)

1 teaspoon baking soda

1 ½ cup sugar

2 cups flour

½ cup shortening

½ cup cream (milk is okay)

2 mashed, very ripe bananas

1 cup chopped or ground walnuts

 

Directions:

Separate the eggs whites from the yolks. Beat the whites until stiff but not dry. Mash the bananas into the yolks. Cream the sugar and shortening and then add the bananas/yolks to the mixture. Next, gradually add the dry ingredients and the cream, alternating. Then add the nuts. Finally, with a spatula, slowly and gently fold in the egg whites. Pour into a 9×13” greased and floured pan. Bake at 350 degrees for approximately 30 minutes. Top with buttercream frosting (recipe is on the powdered sugar box).
